Dry Rubs: A blend of spices, herbs and salts that is applied to the outside of a protein and then rubbed over to form a coating. It can be applied directly before cooing or several hours in advance and used as a marinating technique. During the cooking process the Dry Rub will form a flavorful crust over the top of the protein called ‘The Bark’.
