Pork Dry Rub: A blend of spices, herbs and salts that is applied to the outside of the pork and then rubbed over to form a coating. It can be applied directly before cooing or several hours in advance and used as a marinating technique. During the cooking process the Dry Rub will form a flavorful crust over the top of the beef called ‘The Bark’.
Inferno - This is a journey through the pleasures of heat. Inferno is our hottest level and my personal favorite. Inferno is flavorful but definitely not for those with sensitive systems. But for those of us who like the temperature turned up, this is the level of choice. Taste is not sacrificed for just pure heat though. This level is not made to just simply burn your taste buds out. You will still be overwhelmed with the rich texture and abundance of flavor as the heat settles in.
